Gore for the love of gore is usually not very imaginative and does not build storyes by itself. Modern literature is mostly about the narration of the resolution of conflics, and that is what keeps people engaged. Things happening and the desire to know what is going to happen next.

Starting weak from the begining is ok for games, but it is very badly done in films and literature. You end up thinking the character earnt his successes in an unfair or unbeliveable way. I mean, if he was a weak dude 20 pages ago, when he starts smashings dragons with a hand tied to his back...

I think those series are not bad at all. As with anything, there are strong opinions against the series and for the series. Still, I agree that the last books were not as good as the first ones (as explained above).
