Most of my favourites have already been mentioned, so instead perhaps I'll list others that I found were great:
1. Replay, Ken Grimwood (published under Gollancz's Fantasy Masterwork, but I humbly disagree)
2. Behold the Man, Michael Moorcock
3. When Gravity Fails, George Alec Effinger
4. Lois M Bujold's Vorkosigan Saga, but start with A Shard of Honor + Barrayar (sometimes packaged as Cordelia's Honor)
5. Forever War, Joe Haldeman
6. [Bonus, and just to be controversial] The Road, Cormac McCarthy
