Void Moon by Michael Connelly features a female burglar pulling a heist at a Las Vegas casino. There’s a lot of detail on how it’s accomplished.

There’s also Lawrence Block’s lighthearted ‘Burglar’ series featuring Bernie Rhodenbarr. Bernie operates a bookstore by day and is a burglar by night. The series begins with Burglars Can’t Be Choosers, but I don’t think these really need to be read in order.

The True History of The Kelly Gang by Peter Carey

Also, The Book Thief, but the thief is not a typical 'person'.

I think of Clive Barker's The Thief of Always, but that's more about the theft of time rather than a person. Still it is one of my favorite children's books.

Oh! I forgot! If you like manga, you might want to try D.N. Angel. It's cute and funny.
Well, if we're going to include manga there's always Yu-Gi-Oh too. Bakura is called the King of Thieves! ;)

Huxley, if you want to laugh try the John Dortmunder series by Donald E. Westlake. Dortmunder and his pals are burglars, but their heists never seem to go as planned.

Writing under the name Richard Stark, Westlake also wrote the Parker series. Unlike the humorous Dortmunder series, this one is very hardboiled.

I'm not especially familiar with Lupin, besides one or two of its characters and knowing that Lupin is a thief. But, that being said, definitely check on D.N. Angel. It's about this boy named Daisuke who transforms into a master thief named Dark. I actually wasn't expecting to like it, but it was very good. Got some decent humor in it.
