Another fairly new author is Brandon Mull, he is writing the Fablehaven series. Book 3 just came out, I have only read books 1 and 2, but I enjoyed them. There isn't much Christian symbolism, but they are very clean, yet fun and exciting.
Though it is certainly not in the genre of fantasy, if you are just looking for a book that explores Christian ideology, might I suggest The Brothers Karamazov. It is one of my favorites, very meaty though. The Screwtape letters by CS Lewis is also enlightening. Though not really in the fantasy/action genre.
