Cookbook search

Hey there!
I'm looking for a cookbook. Not a specific title, but a specific topic. I want a book like this:

but on the topic of varietal cuts... like... heart... and kidney.. and liver... and tongue... and all those other bits that you can generally dig up for a song at your local meat department.
I'm convinced these bits are good eats... but i have no idea how to cook them...

anywho... any suggestions would be greatly appreciated.

There are also lots of cookbooks for making your own sausages and for curing various kinds of meats. I found this one by searching amazon's cookbooks and they give the option to search by ingredients..and meats was a choice..

They have all kinds of great books for all aspects of self-sufficient living.

I'd still like to find something more focused-- like the bones book i mentioned before. but this is a great starting point. Thanks :)
